With the new year officially underway, many of us will have spent the past week doing our best to stick to the resolutions we set ourselves, whether you vowed to quit smoking, cut down on sugary foods, or just challenged yourself to be more confident.

One of the most common resolutions is losing weight, but those embarking on that journey this year will likely have already realised how challenging it can be. Eating the right foods is vital if you want to shed some pounds, but if you're cooking for an entire family every night, making healthy meals that meet your calorie goals but also satisfy your kids can feel impossible.

However, one mum on TikTok has just the recipe if you're looking for something tasty, healthy, and easy to make for the whole family. The delicious cheesy chicken fajita rice dish takes just five minutes to prepare and cooks in one dish in the oven.

What's more, the meal is low in calories, high in protein, and is something that children will enjoy too.

Introducing her recipe, Alex wrote: "This is so so easy there is literally no excuse for not having a go at this one. You take a few simple ingredients, throw them together in an oven-proof dish and boom, a tasty, easy dinner for the whole family! The recipe is perfect for a family budget as it costs just £1.56 a portion but also great for a fat loss journey as it has only 435 calories and a massive 42g protein."

Alex's recipe makes four portions, and if you're cooking for yourself, leftovers can be frozen or used for meal prep.

Ingredients

  • 500g diced chicken breast
  • 2 sliced bell peppers
  • 200g uncooked rice
  • 500ml chicken stock
  • 60g reduced-fat soft cheese
  • 80g reduced-fat cheddar
  • 1tsp paprika
  • 1tsp cumin
  • 1tsp garlic salt
  • 1tsp chilli powder (or less if you don't like spice)
  • 1tbsp tomato puree

Mix to coat the chicken and peppers in the spices. Then add 1 tbsp tomato puree, 60g reduced fat soft cheese, 200g uncooked rice and 500ml chicken stock. Mix again, then cover with tin foil. Cook at 180 oC in the oven for around 40-45 minutes (until the rice is fully cooked. If it looks too dry add a taste more water to help the rice cook). Remove from oven, uncover, sprinkle with 80g reduced fat cheddar cheese, then return to oven for a couple of minutes until the cheese is melted. Then serve and enjoy

Method

Alex's recipe takes just five minutes to prepare and two minutes to throw into a dish ready to cook. All you need to do is add your chicken, bell peppers, and spices to an oven-proof dish and mix to coat. Then add in your tomato puree, soft cheese, uncooked rice, and chicken stock.

Cover with foil and cook in the oven at 180C (gas mark 4) for around 40-45 minutes until the rice is fully cooked. If your mixture looks too dry, you can add more water to help the rice cook. Once the rice is cooked, remove the dish from the oven and top with the cheddar, then return to the oven for a few minutes until the cheese is melted.
