MKR recipe episode 12: Fränkische Bratwurst with Potato Salad and Red Cabbage

Ingredients

1m sausage casing, rinsed

Wholegrain German mustard, to serve

Bratwurst

800g pork mince

200g beef mince

2 tsp salt

1 tsp ground black pepper

1 tsp ground coriander

1 tsp dried marjoram

Currywurst sauce

250ml tomato sauce

2 tbs water

1 tbs curry powder

2 tsp smoked paprika

2 tsp Worcestershire sauce

2 tsp honey

½ tsp onion powder

½ tsp chilli powder

Potato salad

1kg potatoes, peeled, cut into 3cm cubes

2 egg yolks

1 tbs German mustard

2 tbs chopped flat leaf parsley

Braised Cabbage

2 tsp olive oil

2 eschallots, thinly sliced

1 tbs butter

1 garlic clove, crushed

¼ red cabbage, thinly sliced

125ml water

2 tbs red wine vinegar

1 tbs brown sugar

½ tsp caraway seeds

Method

1. Rinse casings and place in a large bowl of water. Set aside to soak. Drain before using.

2. To make bratwurst, using your hands combine all ingredients in a large bowl.

3. Using wet hands, push the mixture into a sausage filling machine, ensuring there is no air throughout the mixture. Thread the casing onto the machine and slowly push the filling through to fill and form the sausages. Twist sausages at desired length to form the links. Refrigerate sausages for 1 hour to rest.

4. To make currywurst sauce, combine all ingredients in a small saucepan over low heat. Simmer, stirring, for 5 minutes. Remove from heat and set aside to cool and for flavours to meld.

5. To make potato salad, place potatoes in a saucepan of cold salted water. Bring to a boil. Boil until tender. Drain and transfer to a bowl. Whisk egg yolks, mustard and parsley in a jug. Season generously. Pour mixture over hot potatoes and toss to coat.

6. To braise cabbage, heat oil in a medium saucepan over medium heat. Cook eschallots for about 5 minutes or until translucent. Stir in butter and garlic. Stir in cabbage and the water. Cook, covered, stirring often, for about 10 minutes or until tender. Stir in remaining ingredients. Cook, stirring occasionally, for about 20 minutes or until soft. Season.

7. Heat a lightly oiled frying pan or barbecue over medium heat. Cook sausages until browned all over and cooked through.

8. Serve Fränkische Bratwurst with potato salad, red cabbage, currywurst sauce and mustard.
