If you're looking for a delicious but healthy dinner recipe, this loaded sweet potato recipe may be the perfect choice.
Shared by food influencer, Elizabeth (Lilly) Assender on Instagram, where she posts as @foodie_lilly, this dish has gone down a storm with her followers, with many left delighted with these sweet potatoes.
Sharing the recipe, Lilly wrote: "Crispy chickpeas loaded sweet potato with butter bean hummus and tangy tomatoes. Super healthy, delicious and packed with goodness!"

Crispy chickpea loaded sweet potatoes
Ingredients (Serves one)
- One sweet potato
- Olive oil
- Hummus (Lily has also shared a recipe for a delicious butter bean hummus, but any you have is fine)
- Chilli seasoning
- One can chickpeas
- Salt
- Garlic powder
- Paprika
- Handful of cherry tomatoes
- One tbsp red wine vinegar
- Chopped coriander

Method
Preheat the oven to 200°C (390°F).
Drain the chickpeas and place on a lined baking tray, pat dry with some kitchen roll. Drizzle over some oil and season with garlic powder and salt. Bake in the over for 30 minutes, shaking every ten minutes.
Cut the sweet potato in half, drizzle over a little of the oil and bake in the oven for 25 to 30 minutes.
While the sweet potato and chickpeas are in the oven, half the tomatoes and add to a bowl with the coriander and red wine vinegar. Then set this aside.
Plate the cooked sweet potato, and spread the hummus over and season with olive oil and the chilli seasoning. Then top with the crispy chickpeas and the tomatoes.
