Caroline has ventured all over Italy, from the capital city of Milan to southern areas like Tuscany.
She told RSVP Magazine: “There isn’t a part of Italy that I haven’t loved. My love affair began when I went to Milan at seven years old for three weeks. When I finished college, I went to Italy for a few weeks to study Italian on my own. I got a spot in Piza.
“My brother and his now-wife joined me and we travelled all over Tuscany. We went to many wine-producing towns.
“When my husband Daithi proposed to me, the first thing I said was yes and the second thing was, ‘Can we get married in Italy?’ I knew I wanted us to get married in Tuscany, but I didn’t know where.
“Me and Daithi went on a mini-break there during the winter. It’s not the same experience as summer, but it’s still incredible. There’s wild boar running down the hillside and the best food you’ll ever eat.
“Each little village has its own dish. We got married in Siena, a medieval town, where each quadrant has its own flag and famous dish. We stayed in the countryside and their dish was pici, which is like thick spaghetti, with wild boar. The value is amazing there too, you’d get the best bottle of wine in your entire life for €6.”
After their wedding, the couple went on their honeymoon and one of their stops was Japan.
Caroline said: “At the end of our honeymoon, we stopped there for a few days. We were in Tokyo and my eyes were out on stalks with all the beauty and the incredible cultural differences.
“There was one touristy thing I wanted to do. I'm a huge Kill Bill fan. I wanted to see the restaurant where the Crazy 88 descend on Uma Thurman's character. We had a meal there. It looks completely different as you might expect, but it was fun to be there. We spent a long time looking at all the beautiful temples and taking in the stunning gardens.
“We also hopped on the train to go out of the tourist zones into regular neighbourhoods to get a sense of what things were like. It was such an experience, eating lunch with locals where no one had any English and we hadn't a clue what we were eating.
“We didn't have Google Translate at our fingertips then. Shibuya Crossing was completely overwhelming and spectacular. We watched the dance of thousands of people weaving past each other.
“On our last night, we had a different dish in loads of restaurants because I couldn't bear that we were leaving so soon. I wanted to experience as much as possible.”
The couple live in California with their two children and still enjoy going on holidays, with plenty of incredible destinations near their home.
“The main holiday would be going back to Ireland to be with family from California,” the television presenter shared. “We’ve also holidayed in Costa Rico, Mexico or more locally like Yosemite and Palm Springs.”
