Pigs in blankets, the quintessential Christmas dinner or festive party treat, are usually devoured without a trace.

But on the off chance that you find yourself with leftovers, fear not – they needn't be thrown into the bin.

Instead, they can be given a delicious second life, ensuring no festive fare goes to waste.

Recipe book author Amy Sheppard has concocted a mouth-watering solution for surplus piggies.

In a November TikTok tutorial, Amy unveiled her Pigs in Blankets Pie, a genius dish where the beloved pigs in blankets are crowned with flaky pastry and nestled in a comforting chicken gravy sauce, reports MirrorOnline.

Fans have been quick to offer their twists on the recipe, with Lauren suggesting: "This with Brie on top and a dollop of cranberry sauce."

Others are eager to try it out, with comments like "That looks fantastic, can't wait to give it a go soon," and "This looks amazing thank you for sharing, I'm going to make it with veggie sausages!"

The enthusiasm was felt all around, with Harriet saying: "I want that for breakfast lunch and dinner."

Pigs in Blankets Pie! I only used the good ingredients in this pie - leeks, mashed potato, cream and pigs in blankets!! It is so easy and SO comforting...perfect for having in the build up to Christmas! I went in two supermarkets this week to try and get pigs in blankets and they'd sold out...in November. So I made these ones from full sized sausages torn in half and some Streaky Bacon- they were so good! I used frozen mash in this as it's so much quicker, but if you've got any leftover, it's a great way to use it up I've written up the recipe below - I would love to know if you're going to give this one a try! Feeds 4-6 12 pigs in Blankets 40g butter 2 leeks finely sliced 2 tbsp flour 600ml chicken stock 100ml single cream A tsp fresh Thyme leaves 300g frozen mash 1 sheet ready rolled puff pastry 1 egg beaten Cook the pigs in Blankets to packet instructions and set aside Melt the butter in a large non-stick frying. Add the leeks and fry for 5-7 minutes, stirring regularly until soft. Stir in the flour on the heat for 5 minutes. Slowly add the stock a little at a time, bringing it to the boil each time before adding more. Stir continuously. Season with salt and pepper and add a little Thyme. Stir in the cream. Pour the mixture into a baking dish roughly 31cm x 21cm. Place the pigs in Blankets evenly spread amongst the leeks. Heat the oven to 190C Microwave the frozen mash to packet instructions. Season with salt and pepper. Use an icecream scoop to place dollops of mash between the sausages at equal intervals. Cut star shapes out of the pastry and place over the top of the filling until covered. Brush with beaten egg. Bake in the oven for 30 minutes or until golden brown and cooked through. #pie #baking #christmas #christmasideas #christmasinspo #homemade #pigsinblankets #recipe #comfortfood #familydinnerideas #familyfood #cosyfood #dinnerideas #christmasrecipe

Pigs in Blankets Pie

Ingredients

  • 12 pigs in blankets
  • 40g butter
  • Two leeks, finely sliced
  • Two tbsp flour
  • 600ml chicken stock
  • 100ml single cream
  • One tsp fresh thyme leaves
  • 300g frozen mash
  • One sheet ready rolled puff pastry
  • One egg, beaten

Method

Cook the pigs in blankets according to the packet instructions and set aside. Melt the butter in a large non-stick frying. Add the leeks and fry for five to seven minutes, stirring regularly until soft.

Stir in the flour on the heat for five minutes. Slowly add the stock a little at a time, bringing it to the boil each time before adding more. Stir continuously. Season with salt and pepper and add a little thyme. Then add in the cream.

Pour the mixture into a baking dish roughly 31cm x 21cm. Place the pigs in blankets evenly spread amongst the leeks.

Heat the oven to 190℃. While the oven is heating up, microwave the frozen mash to packet instructions. Season with salt and pepper.

Use an ice cream scoop, place scoops of mash between the sausages, making sure they’re an equal distance apart from each other.

Cut star shapes out of the pastry with a cookie cutter and place over the top of the filling until covered. Brush the pastry lid with beaten egg.

Bake in the oven for 30 minutes or until golden brown and cooked through. Serve and enjoy!
