MKR episode 22 recipe: Kingfish Ceviche

Ingredients

600g sashimi-grade kingfish, thinly sliced

Thinly sliced chilli, diced cucumber and coriander leaves, to garnish

Curing marinade & sauce

1/2 small avocado, chopped

Juice of 4 limes

Juice of 2 lemons

125ml fish stock

1/2 long red chilli

1 eschallot, chopped

8 coriander roots, chopped

Method

1. To make marinade and sauce, place all ingredients in a blender. Blend until smooth. Season to taste. Pour into a bowl and add fish. Refrigerate, covered, for 10-15 minutes or until fish is cured to your liking.

2. Spoon a little of the marinade sauce onto serving plates and top with cured fish. Garnish with chilli, diced cucumber and coriander leaves.
