As thousands flocked to Las Vegas this past weekend for the Formula 1 Grand Prix, COTE Korean Steakhouse also teamed up with The Venetian Las Vegas to preview its first West Coast location.
Ahead of the official summer 2025 opening, founder Simon Kim and the COTE team debuted exclusive creations at a Friday night event on the hotel’s Hospitality Viewing Deck overlooking the Las Vegas Strip and race track.
As the night got underway, Kim spoke to the packed room about returning to Sin City for his restaurant’s next location. “I’m actually from Vegas. I have a 702 area code number,” he said. “As soon as I opened COTE, I was destined to come back to Las Vegas. I learned so much from Vegas. I started my career in hospitality here in Vegas and Vegas is encrypted in my DNA.”
Executive chef David Shim later unveiled the A5 “BlackJack” sandwich, which featured A5 Wagyu from Kagoshima Prefecture, Perigord black truffle and milk toast with truffle aioli. Sondre Kasin, director of bars, also introduced the Diamonds Are Forever cocktail, crafted with Absolut Elyx, green apple, verjus, and edible glitter — a nod to the 1971 James Bond film.
“The energy and excitement of F1 is amazing as always. And we wanted to bring the best that COTE has to offer,” Shim added, “so that everybody here can eat like kings and queens.”
Several notables were also in attendance to experience the exclusive offerings while listening to the race cars’ roaring engines as they went around the track for qualifying, including Reilly Opelka, Soo Joo Park, Dylan Barbour, Hannah Godwin, Jason Tartick, chef Josh Capon, Marc Lotenberg, Gabriella Gonzalez and Tyler Bergantino.
COTE Korean Steakhouse also has locations in New York, Miami and Singapore.
