Pop star Sabrina Carpenter has had quite the year - her smash hits Espresso, Please Please Please and Taste have catapulted her to global stardom, and she toured the world with Taylor Swift as the opening act for the Eras Tour.

She also took home two Grammys at the awards ceremony last night - and when she's not on stage, keeping up her energy is key.

In fact, one of her best-loved meals is a healthy yet delicious staple that many of us have on rotation at home. Chicken fajitas is a true family favourite, and one of the best things about it is that it's so easy and quick to make.

According to J-14, Sabrina said in an Instagram Live that this Mexican-inspired dish was one of her favourite foods. She’s even gushed about her love for them on X, with a previous Father's Day post reading: "Dadda thank u for teaching me how to make fajitas."

The fuss-free dish is great for using up any stray vegetables that you have in the fridge, and you can fill each one to your heart's content with anything from salsa and sour cream to guacamole and hot sauce.

The BBC Good Food recipe for chicken fajitas comes together in less than 15 minutes, yet still provides a 'vibrant midweek meal' that everybody around the table will absolutely love.

The chicken is marinated in a smoky, spicy mix of ingredients before being cooked over a griddle pan, making the dish even more packed with flavour. Paired with fresh salsa, a zingy burst of lime and served with warm, soft tortillas, it's the perfect way to make those midweek dinners a little bit more exciting.

Here's everything you need to make this recipe, which serves four.

Ingredients

  • Two chicken breasts, finely sliced
  • One red onion, finely sliced
  • One red pepper, sliced
  • One red chilli finely sliced (optional)

  • One tbsp smoked paprika
  • One tbsp ground coriander
  • Ground cumin
  • Two garlic cloves, crushed
  • Four tbsp olive oil
  • One lime, juiced
  • Tabasco
  • Eight tortillas
  • Mixed salad
  • 230g fresh salsa

Method

Heat oven to 200C/180C fan/gas 6 and wrap the tortillas in foil. Mix one heaped tbsp smoked paprika, one tbsp ground coriander, a pinch of ground cumin, two crushed garlic cloves, four tbsp olive oil, the juice of one lime and a few drops of Tabasco together in a bowl with a big pinch each of salt and pepper.

Then, stir the chicken breasts, onion, red pepper and chilli into the marinade, giving it a good mix to ensure that everything is combined.

Heat a griddle pan until smoking hot, and add the chicken and marinade to the pan. Keep everything moving over a high heat for about five minutes using tongs until you get a nice charred effect.

To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw, cook until done. While this is cooking, put the tortillas in the oven to heat up for around 10 minutes and serve with the cooked chicken, a bag of mixed salad and some fresh salsa.
