Ingredients:
- 1 pre-made pie crust (or homemade if you prefer)
- 4 cups fresh strawberries, hulled and halved
- 1 cup of sliced peaches
- 1 cup brown sugar
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
- 1/2 teaspoon vanilla extract
- 2 tablespoons of bourbon (any flavor)
- Whipped cream or vanilla ice cream (optional, for serving)
Instructions:
- Prepare the crust:
- If using a pre-made pie crust, follow the directions to bake it (usually pre-bake for 10-12 minutes until golden). Let it cool completely.
- If making a homemade crust, prepare and bake it according to your recipe, then let it cool.
- Make the filling:
- In a saucepan, combine 1 cup of sugar and 3 tablespoons of cornstarch. Stir in 1 cup of water and bring to a simmer over medium heat.
- Cook, stirring constantly, until the mixture thickens and becomes clear (about 2-3 minutes).
- Stir in the lemon juice and vanilla extract.
- Remove the saucepan from heat and let the mixture cool to room temperature.
- Assemble the pie:
- Gently fold the halved strawberries into the cooled sugar mixture, making sure the strawberries are well-coated.
- Pour the strawberry mixture into your cooled pie crust.
- Chill:
- Refrigerate the pie for at least 3 hours, or until the filling has set.
- Serve:
