Method:
First, check how the mini moulds will fit in your air fryer and rub a little butter around the inside of eight mini pudding basins.
Chop the butter into small cubes in a mixing bowl, add the flour and icing sugar, and using a fork or pastry blender, work them together until they resemble breadcrumbs.
Sprinkle enough of the water over the flour and stir to bring together a soft ball of dough. Dust the work surface with flour, put the dough in the middle, sprinkle with more flour, and roll out until about 1.5mm thick.
Select pastry cutters to match the top and bottom diameters of the mini basins and press them into the dough to make eight circles of each size. Gather up pastry offcuts and repeat the rolling and cutting process as needed.
Transfer the larger circles to the bottom of the mini basins and add a teaspoon of mincemeat. Brush the smaller circles with milk then place them, milk side down, over the mincemeat, pressing lightly around the edges.
Using the tip of a pair of scissors, make a snip in the top of each pie to allow steam to escape. Chill for five minutes and preheat the air fryer to 170° for five minutes.
Working quickly, open the air fryer, lift the basins inside, close the door, and set it to bake at 170° for 12 to 15 minutes.Carefully remove the cooked mince pies from the air fryer and cook the second batch if required. Tip the cooked mince pies out of their basins and leave to cool on a wire rack.
