The singer, who also has a grown-up son with his first wife, who he married in his early 20s for seven years, said Molly Siobhan has "changed his life".
He told the Irish Mirror: "It was wonderful and marvellous and beautiful. It was a plan. But the thing is we started planning it when I was 49 and I was much fitter and stronger.
"But the thing is she is an incentive to keep well and keep fit.
"She has changed our lives in more ways than you can imagine in a very positive way."
He laughed: "But you certainly know which knee is working when... there is a bit of that.
"To be honest, I can understand how women have babies and more babies. I think there is some sort of memory wiping thing that goes on.
"Like it's 'oh never again' and then the memory is wiped and it's 'Jaysus I'd love another baby'.
"It's unbelievable but my point is that now that she is five, my memory is kind of wiped of the earlier stuff. She is brilliant and she is just so animated now.
"We had her in October 2019 just a couple of months before the pandemic so we had a bubble within a bubble."
But Harrington revealed being a dad to a five-year-old at 65 years of age can be challenging sometimes.
He spent months in recovery after rupturing his Achilles tendon while at the playground with his daughter.
''Molly changed in more than you imagine positive "I ruptured my Achilles tendon. I was out for months.
"I was in a playground. It wasn't anything to do with her, but I was ducking and diving kids and the next thing bang. It was a very simple thing.
"I had a real long tricky summer because I was immobilised with this injury."
Harrington was speaking as he and Eurovision star Charlie McGettigan reunited after 30 years to release a new charity single in aid of Our Lady's Hospice & Care Services' (OLH&CS) Light Up A Life Remembrance Ceremony.
We'll Be Missing You is the first original recording from the duo in 30 years, since their Eurovision win with Rock 'n' Roll Kids in 1994. The new song is about remembering loved ones at Christmas time - those who have passed away, as well as those who are unable to be close.
Proceeds raised from the new track will go towards OLH&CS in Harold's Cross, Blackrock and Wicklow.
Harrington said: "The hospice folks called me earlier in the summer. They were talking to me about the Light Up ceremony, I was unaware of the scale of it. They asked would Charlie be interested and I said of course, I'll get in touch with him.
"He hasn't had personal experience of hospice care, but I have, but he was absolutely thrilled to do it. I've been since time began going right back to my mother in 2002, I've witnessed hospice care at home.
"In 2005 my sister had hospice care at home, which is incredible and also just gone in 2023, my brother Richard also had home hospice care.
"I also witnessed it with another brother in North America.
"Apart from the fact that they are taking great care of your loved one and making sure that they are having a very dignified and peaceful transition from life to death, they bridge that imaginary gap.
"They physically do this very quietly in a very dignified way. They should '' Hospice s get loads support amount they do. real get loads of support for the amount of work they do. It is a real vocation. There is no doubt about it."
